Salad in Pita with Sweet Potato Fries

This is a great idea of changing the ‘outfit’ for you daily salad and adding Sweet Potato Baked Fries. Tastes heavenly but is fresh and not heavy rather healthy. Give it a try!

SERVES: 1

PREP TIME: 5-10 min

NEED: oven with top grill or broil

INGREDIENTS:

  1. 1 pita bread
  2. 1 plum tomato, sliced
  3. 10 cm of cucumber, sliced
  4. 10 cm of pickle or cucumber in brine, sliced
  5. 2 tbsp of Mayo
  6. Fresh Sprouts
  7. Sweet Onion – few feathers
  8. 5 cm Leek – sliced
  9. 1 sweet potato
  10. 2 tsbp of canola oil
  11. sprinkle of Salt

RECIPE:

  2. Toast or grill Pita bread
  3. Spread Mayo on both sides inside pita bread
  4. Stuff pita by layering pickles, tomato, onion, sprouts, leek, cucumber in this order.
  5. Enjoy!
