Vegetarian Tomato Pasta
Pasta pasta pasta… who doesn’t love it? and you always have it home, along with some fresh tomatoes, puree, passata or canned? Here you go, quick but very tasty.

PREP TIME: 20 min
NEED: Deep pan or wok
INGREDIENTS:
- 400 g pasta
- 500 g tomato puree
- 4 tbsp oil
- 3 garlic cloves
- 1 large onion, chopped
- 2 chili peppers, sliced
- 1/2 tsp salt
- 1/2 sugar
- 2 tsp basil
- 1 tsp oregano
- 1 tbsp sweet paprika
- Olive oil
- Fresh basil leaves
- Parmesan or Grana Padano cheese
RECIPE:
- Cook your favorite pasta according to direction, al dente
- In the meantime, add oil, garlic, onion, chili peppers and heat up, stir on low hear for 4-5 min (do not burn)
- Add tomato pure and spices (7-11) and simmer for 10 min
- Add pasta to the sauce, mix well and serve
- Garnish with olive oil, basil leaves and Parmesan cheese
PAIR WITH: nothing or fresh crispy baguette, and definitely wine
