Polish Creamy Chanterelles Wild Mushroom Bacon Pasta

I don’t think I have to remind you how healthy chanterelles are and how delicious this mean is. And as most of the time on this web – easy to prepare. This is very popular dish in Poland, especially famous in the fall during mushroom picking season – then it is prepared from fresh mushroom, for the rest of the year frozen mushroom can be used.
SERVES: 2-3
PREP TIME: 25 min
NEED: pot for pasta, wok or large pan
INGREDIENTS:
- 250g pasta
- 100g (medium) onion, chopped
- 2 garlic gloves, sliced
- 100g smoked bacon, cut in strips
- 200g chanterelles, cleaned (see here)
- 1 tbsp clarified butter
- 1/2 cup 30% fat cream
- pinch of salt and pepper to taste
- (optional) chives
RECIPE:
- Cook pasta according to directions
- Melt butter and add onion and garlic, fry on low/medium heat for 5 min
- Add bacon, keep low/medium hear for 5 min
- Add chanterelles, keep low/medium heat for 5 min
- Add cream, salt, pepper and bring to boil, keep on low heat for 2 min
- Add pasta, and keep on low heat for 2 min
- Serve – you can add basil or sprinkle with chives
