Chili – Garlic Vinegar Sauce


This is the sauce that I used every day with every meal across Vietnam. With rice, with pho, with noodles, with eggs. After traveling to Asia and Mexico I think I basically got addicted to spicy food but I want my sauces without any preservatives so I make them myself. If you like spicy food and spicy sauces – this jar is definitely a must on you table.  

SERVES: many 🙂

PREP TIME: 5 min

NEED: 1/4 qt or 1/4 liter heatproof jar

INGREDIENTS:

  1. 1 cup vinegar
  2. 1 tsp sugar
  3. 1/2 tsp salt
  4. 4 garlic cloves
  5. 4 Thai chiles

RECIPE:

  1. Slices thinly garlic and chiles and lace in the jar
  2. Bring vinegar, sugar and salt to a boil in saucepan. Stir until  sugar and salt dissolves.
  3. Pour liquid into the jar
  4. Let cool. Cover and wait for at least 4 hours before serving (let it pickle).
  5. Refrigerate for up to 4 weeks.
