Quick & Creamy Tomato Soup

One of the quickest soups and last resort  because I ofter have these ingredients in my kitchen.

PREP TIME: 20 min

NEED: 2 liter pot, blender


  1. 1 liter tomato juice
  2. 1 small onion
  3. 2 garlic cloves
  4. 1 carrot
  5. 1 parsley root
  6. 1 cup sour cream 18%
  7. 4 tbsp oil
  8. 1 tsp basil
  9. 1 tsp sea salt
  10. 1 tsp sugar
  11. pinch of chili


  1. Cut in bite size pieces vegetables 1-5, add oil to the pot, add vegetables, then hear up and simmer for 5 minutes.
  2. Add tomato juice, salt, chili, sugar, basil and bring to boil. Cook for 10 minutes.
  3. Add sour cream.
  4. Blend until smooth and creamy using hand blender or food processor/blender.

PAIR WITH: rice, noodles
