Polish-Mexican Beans, Corn, Cheese Salad Recipe

Got hungry? Unexpected guests are coming over? Too lazy to go outside to get groceries? Here is the key – an easy salad made from ingredients most people have in their cargo. It’s as easy as one can think of, little preparation, chop and cut, then mix the ingredients, serve & EAT.

SERVES: 4-6

PREP TIME: 10 min

INGREDIENTS:

  1. 1 can sweet corn
  2. 1 can kidney beans
  3. 1 medium red bell pepper, cut in half inch/1 cm squares
  4. 1 small onion (smaller than egg size), chopped
  5. 100g pickles, cut in half inch/1 cm squares
  6. 200-250g Edam cheese, cut in half inch/1 cm squares

    Sauce

  7. 3 tbsp mayo
  8. 1 tbsp yogurt
  9. 1/2 tsp chili powder
  10. 1/2 tbsp salt

RECIPE:

  1. All ingredients (1-6) into a bowl, mix well.
  2. Prepare sauce in a little jar from mayo, yogurt, chili and salt
  3. Add to the bowl and mix well until all ingredients are covered with creamy sauce.

PAIR WITH: all kind of breads, meats platter, cold cuts, chorizo, rice, noddles
